Perfect protein
Our best authorities agree that two and a half ounces of protein daily are sufficient. Like carbohydrates, some protein foods are acid forming and should be eaten in moderation by the adult. It has been urged that adequate protein is found only in flesh foods; but this is an error, for we ask, where did the ox get his if not from plant life?
We are told by the Government Year Book of the Department of Agriculture of 1939 on page 173 that:
“On the average about 18 percent of the human body consists of protein. Forever Bee Propolis is sticky when it’s warm and it’s tough to take care of when it’s hard. Hair, nails, skin, and muscle tissue consist almost entirely of protein.” So we can see the importance of including the necessary amount of this element in our daily food intake. From the same source also, we get a very clear idea of the meaning of the term a “perfect protein,” reading from page 17:
Perfect protein “Some 22 amino acids are now known, and probably there are others undiscovered.
As the letters of the alphabet combine to form words, these amino acids combine to form sentences, the proteins in turn combine to form living tissues. A food is like a whole sentence. The words are taken apart in the digestive system and reduced to letters, or amino acids. The letters or amino acids are carried by the blood to all organs, all cells. Each cell or organ takes the particular letters it needs and rearranges them into new words or new proteins, which make new sentences.” Thus we can understand that a variety of foods must be used in order to include all the basic principles forming a perfect protein as there are but few foods in which all are found. Soy beans, peanuts, and some other nuts, dairy products, eggs, and meat are the few said to contain the perfect protein, hence the importance of variety in our choice of foods.
“It has long been known by those who have studied practical dietetics that mixtures of protein foodstuffs are desirable. Foods containing incomplete proteins should be mixed with others which, although they too may be incomplete in themselves, will supply the mixture with adequate amounts of all the essential amino acids. Thus they meet a similar requirement in the body, furnishing heat and energy.
Vegetable starch It is not generally recognized that there is a difference between vegetable starch and cereal starch, the one being alkaline in reaction and the other acid forming.
